1. Ramblings

Just a few weeks left for Christmas. THIS year, I'm trying not to get into a rush at last minute and peparing everything beforehand ;-)

At least, we are eating very low fat and healthy right now in order to shed a few pounds before the festive season comes around. That way you don't need to have a bad conscience when indulging into the delicious food during the holidays.

The lemon chicken with vegetables is a perfect dinner recipe for your family or if you have friends visiting.

2. Lemon Chicken with Vegetables

Makes 4 servings

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup chicken broth
  • 10 whole mushrooms, sliced
  • 2 carrots, peeled and cut into small pieces
  • 2 medium zucchini, thinly sliced
Marinade
  • 2 tablespoons lemon juice
  • 1 tablespoon Splenda brown sugar substitute
  • 1 teaspoon garlic, crushed
  • 2 tablespoons Splenda sugar substitute
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 teaspoon dried thyme, oregano, or rosemary

Directions

Rinse and cut all visible fat off of chicken breasts. Place chicken in a plastic container.

Combine marinade ingredients, and pour over chicken breasts.

Coat a large skillet with nonstick cooking spray (nonfat), and preheat over medium heat. Place chicken in skillet, saving the marinade, and cook for 2-4 minutes on each side.

Reduce heat to low, and add marinade, broth, mushrooms, and carrots to the skillet. Cover and simmer for 10-12 minutes. Add zucchini, and simmer for an additional 3-5 minutes. Serve hot.

3. Gives you the guts to get a smaller gut

Right no, as I right this (Sunday), I'm in the Tampa Airport waiting for my plane to arrive.

As I'm sitting here, it's absolutely shocking.

I would say that out of every 100 people passing by, 90 of them couldn't do even 20 pushups.

Maybe 95.

And about 60 of every 100 are so huge, so gigantic, they either can't walk right or parts of their bodies are sticking out so far that, if I was a security agent here, I'd wonder if they weren't hiding weapons under their clothes. This is mind-blowing. The kid in front of me now, I'd say he's 9... his cheeks are jiggling like jello with every step he takes. And his mother could qualify for her own zip code. This kid is doomed to a life of misery.

Not too many years ago, I owned a huge retail book business. And I would bet you $5O,000... oh forget that, I'd wager $1O0,000 that 80% of these Jurassic era people's kitchens boast at least 1 and probably 3 or more cookbooks aimed at healthy eating and that they own at least 1 home exercise machine. And I'll bet none of them have been read or used in months and probably years.

So hmmmm. What I want you to do now will either inspire you to action or depress you (or both).

OK. When you can spend 5-10 minutes TODAY (not tomorrow) take off all your clothes and look at yourself in a full- length mirror. Get a good front, side and back view. Use a handheld mirror to help you get the back view if necessary, so you can see the damage.

Now sit down in front of the mirror so that your gut hangs out nice and big.

So you are bare "negged" sitting down in front of the mirror... got the scene?

Now, notice how you feel.

Disgusted? Embarrassed?

Now pull out some recent pictures of yourself. Well?

Whadd'ya feeling?

I hope you are shocked to positive action... to eat less today and to get sweatin', and then to do it all again tomorrow.

But if you are feeling hopeless, that's more common. If you do, realize that this feeling is the kiss of death to the possibility of setting some great health goals and accomplishing them.

Know this:

Lack of confidence, lack of faith that you can do anything about this or any other dilemma you face now or in the future is a ticking time bomb. If this is how you feel, depression has either already engulfed you, darkening every day or...

It's just around the corner.

So if and when it does come, don't you dare let anyone tell you that you have a disease... or that you have a chemical imbalance. The only imbalance is from the massive amount of chemicals you've been stuffing in your mouth from all those boxes, bottles and cans of processed non-food.

What it most certainly is, is a lack of confidence based on your past and current lack of will.

Loss of faith in yourself.

Lack of trust in yourself based on your habitual actions brought on by your disempowered thoughts.

What you need is the ability to believe that you can do this.

Yes, confidence, faith and trust in yourself is an acquired skill that you CAN learn and instill into yourself.
