2. Penne with Artichoke Hearts


Who doesn't like pasta? My family loves them, but making the same old pasta over and over gets a little bit boring.

The artichoke is an ingredient that is rarely used for paste and I wonder why? Maybe because it isn't red??

It tastes super yummy and has many health benefits, so feel free to take a second serving.

Ingredients

  • 1 pound penne
  • 9 ounces artichoke hearts, cooked
  • 8 ounces fresh spinach
  • 1 onion
  • 3/4 teaspoon oregano
  • 2 cloves garlic
  • salt and pepper
  • 3/8 cup dry white wine
  • 3 tablespoons lemon juice
  • 3/4 cup lowfat ricotta cheese
  • 1 tablespoon lemon zest, grated

Directions

Slice about 2/3 of artichokes into small wedges and chop the rust very thinly. Set aside.

Cook Penne al dente according to instructions on the package.

Mince onions and garlic. Sauté onions and garlic in water until soft. Add oregano, salt and fresh-ground pepper.

Wash spinach. Reduce heat to low and stir in wine, lemon juice, spinach and thinly chopped artichokes.

Simmer while constantly stirring, until spinach is wilted for about 3 minutes.

Stir in ricotta cheese and the artichoke wedges.

Remove from heat and carefully mix drained pasta with sauce. Add lemon zest just before serving.

Enjoy!
