Creamy spinach is one of those quick and delicious low fat dinner recipes you can have when you don't feel like cooking for too long.
You can have it with low fat crackers, or even with a nice grill fish fillet (which does not add much significant fat to your diet).
1 Tbsp low fat margarine
3/4 cup of evaporated skim milk
2 Tbsp grated Parmesan cheese
3 cups of chopped cook spinach (or 2 packs of frozen spinach)
This is what you do:
Melt the margarine in a saucepan over medium heat.
Add the spinach and continue heating, stirring constantly.
Add the milk, pepper and cheese and continue stirring over medium heat till the mixture goes thick.
Serve the creamy spinach immediately.
