I think this egg salad sandwich is one of the easiest low fat lunch recipes you can find. It's delicious, and low in fat.
2 hard boiled eggs, diced
2 Tbsp diced onions
2 Tbsp diced celery
1 slice crisp bacon
1.5 Tbsp low fat mayonnaise
1.5 tsp minced fresh parsley
1/2 tsp Dijon mustard
1/4 tsp horseradish
2 slices of toasted Italian bread
2 lettuce leaves
1/2 tomato, cut in 1/4 wedges
This is what you do:
Combine eggs, onion, celery, bacon, mayo, parsley, mustard and horseradish.
Top each slice of bread with 1 lettuce leaf, 1/2 of the egg mixture and 1 tomato wedge.
Nice and easy... and delicious!
