Strawberry Meringue Tarts with Raspberry Sauce

A low-fat dessert recipe of individual meringue shells filled with frozen yogurt, covered with strawberries, and drizzled with raspberry sauce. A very refreshing, fruity dessert recipe.


Ingredients:

FOR THE SHELLS

3 egg whites, at room temperature
2/3 cup granulated sugar
1/8 tsp. cream of tartar
1/2 tsp. vanilla extract

FOR THE FILLING

2 cups Frozen Strawberry Yogurt (Low Fat)
2 cups sliced, fresh strawberries

FOR THE RASPBERRY SAUCE

1 pkg (300 gram size), frozen raspberries (unsweetened)
1 tbsp. icing sugar OR honey, (may add more, to taste)

Instructions:

FOR THE SHELLS

In a bowl, beat, using an electric mixer, the egg whites with the cream of tartar, until soft peak sform.

Gradually add the granulated sugar, a tablespoon at a time, beating with an electric mixer, until stiff peaks form.

Beat in the vanilla extract.

Spoon the meringue onto a foil-lined baking sheet into 6 - 5" rounds.

Using the underside of a spoon, shape the meringue into "nests".

Bake at 250 degrees F, (120 degrees C), for two hours or until meringues are crisp, but not browned, and can easily be removed from the foil. If foil sticks, continue baking meringues.

Cool, then store in a sealed container for up to a few days. If you wish to store the meringue "nests" longer, freezer them in a sealed container.

FOR THE RASPBERRY SAUCE

In a blender, puree the raspberries.

Stir in the icing sugar, or honey, (to desired sweetness). This can be kept in the refrigerator for up to a few days.

TO SERVE

Spoon the frozen yogurt into the meringue shells, spoon fresh sliced strawberries over top, and add a drizzle of the raspberry sauce.
