Good Morning!

Hopefully you "survived" the Easter holidays without putting on too much weight.

I know how hard it is to resist all the delicious goodies and especially the chocolate eggs :-(

Anyhow, now is the time to get back on track with your goals and start a healthy eating regimen again. You may already have your vacation planned and it's much less time to go than you might realize.

We take our vacation this year in June, so there's only a little bit more than 2 months left for me to get into shape for showing off that new bathing suit I bought. It's supposed to make you look slimmer and I believe, it really does.

2. Roasted Potatoes with Rosemary

This is one of my favorite potato recipes. We usually make them when doing barbecue, but they make also a great dinner by themselves.

The added benefit is that leftovers can be eaten cold on the next day and still taste wonderful. This saves you a lot of cooking when you're pressed for time :-)

The recipe is for 2 persons, you can multiply the numbers if you are more or if you want to have leftovers.

I always used canola oil, but as this oil is usually highly refined and therefore not very healthy, I started cooking with (natural) coconut oil and it really is much better!

  • 4 medium organic potatoes
  • 1 tablespoon coconut oil
  • sea salt
  • ground black pepper
  • 1 Tbsp Rosemary Springs, preferably fresh


If you want to complete this recipe within half an hour, you should "nuke" your potatoes in a microwave. Of course, you may decide to go "the natural way" (boiling them first and then roasting them), but that will delay you for an hour.

So, if you want to prepare this low fat dinner recipe within 30 minutes, you will be better off "nuking" the spuds.

After that, you should finely cut the potatoes 2/3 of the way, as shown in the above picture. Keep the skin on, as this adds texture and vitamins to your meal. (Therefore use organically grown potatoes.)

Brush some oil on a baking tray, and place the potatoes in there.

Next, mix the salt, rosemary and pepper and sprinkle over the cut potatoes.

Brush or sprinkle coconut oil on the potatoes, and chuck them into the oven at about 180° C (approximately 356° F) for about 30 minutes (or till the potatoes are crispy).

There's so much information about dieting and healthy eating and some of it is contradictory. One source says A, the next one claims B and the third one thinks C is right.

But, unfortunately there's so much inaccurate, not scientifically based information, that could even hurt you. That is usually where the confusion begins...and for some...the INSANITY!
