This is a great low fat banana recipe for dessert or for coffee time. Yes, I know I should not have coffee, but you can have tea if you want. ;-)
I'll deal with my coffee addiction later on.
The great thing about this low fat banana pie recipe is that you can add other fruits as well without increasing the amount of fat in your pie (you still add kilo joules or calories though), and still get a great dessert or baking dish.
A delicious and easy pie! You can use any flavor of yogurt along with other fruits, but this is my favorite. It'is a great alternative to cheesecake and it's nutritious enough to eat for breakfast!
The nutritional information has taken into account the kilo joules and fat in the actual pie crust, which you prepare separately.
2 pints of strawberry (nice, sweet and fresh)
3 cups of low fat strawberry yogurt
1 large banana, diced
1 Tbs splenda (or favorite artificial sweetener)
1 tsp lime juice (or lemon)
1 baked low fat piecrust
This is what you do:
Slice in halves two thirds of the strawberries, and set aside the rest for garnishing.
Blend 1 cup of yogurt, banana and Splenda together till evenly mixed. Pour on a large bowl.
Put the rest of the yogurt into the blender and add half of the sliced strawberries and the lime juice and blend.
Add the yogurt mixture to the banana yogurt mixture and mix well.
Add the other half of sliced strawberries into the mix, and pour the mix into the low fat pie crust.
Now, slice the 1/3 strawberries you set aside at the beginning (I hope you didn't eat them!) and place then on top of the pie.
That's it! Your low fat banana recipe is ready!
If you wish, you can chill it in the fridge for an hour or two before serving.

By the way you can substitute Splenda with Stevia, that's all the rage now. I haven't tried it so can't give you detailed instructions, but what I heard from friends, you need to start with VERY little stevia, because it is much sweeter than Splenda.
