German Apple and Sausage Pancake

This is a heavy duty low fat breakfast recipe. Treat with caution, and enjoy. This pancake recipe yields 7 Weight Watcher's points for half a pancake!

This low fat breakfast recipe is only for those days when you want to have something more "substantial" for breakfast.

If you are disciplined enough, you may enjoy your 7 points of indulgence... just every now and then. ;-)

And remember that although this is a low fat pancake recipe, it still can help you get big if you're not careful.

Those who are keen on a low carb diet should avoid this recipe. Period!

Fortunately for me, and many others who follow healthy eating programs such as Weight Watchers can still enjoy the simplest and most delicious foods in moderation.

And I'm not saying that low carbs diets are not good or ineffective. I've seen enough proof from many people to conclude that they do work.

But what I'm saying is that I prefer the healthy low fat programs because they give you freedom to eat almost anything in moderation.

Am I addicted to carbs? Maybe I am... and loving it! ;-)

Enjoy your low fat breakfast pancakes!


1/2 cup flour

2 tsp granulated sugar

1/4 tsp baking soda

3/4 cup buttermilk

2 eggs

1/8 tsp cream of tartar

1 small apple, cored

2 brown-and-serve sausage links (1 oz), cooked and cut lengthwise intohalves

1/2 tsp apple pie spice

This is what you do:

Preheat oven to 375 F (190 C)

Mix flour in a mixing bowl, 1 tsp sugar, and the baking soda. Set aside.

In a separate bowl, beat together the buttermilk and egg yolks, and set aside.

In another bowl, beat the egg whites till foamy. Then add the cream tartar and continue beating till stiff (but not dry).

Stir the buttermilk mix into the dry ingredients till smooth, and fold in the beaten egg whites.

Spray an oven proof tray with cannola oil.

Spread the batter evenly on the oven proof tray.

Place the sausage halves and sliced apple on top of the batter.

Combine the remaining sugar with the apple pie spice, and sprinkle over the pancake batter.

Bake it for about 20 minutes.
