The Dijon Chicken Breast a la Lemon is a low fat dinner dish that you can cook in just about 30 minutes.
This recipe serves 6, and is worth only 2 points in the WW scale.
I really love the taste of tender low fat chicken breast in this recipe, as the lemon flavours the bread crumbs coating, and the dijon adds a bit of a kick to your palatte.
Ingredients: 2 tsps of grated lemon rind 1/2 cup of dry breadcrumbs 3 Tbsp lemon juice 2 Tbsp Dijon Mustard (whole) 1 Tbsp of lime juice 6 skinless chicken breast Cannola oil spray (or your favourite nonstick, low fat, low cholesterol spray oil) ;-) |

This is what you do
Mix well the breadcrums and lemon rind.
Now mix together the lemon juice, lime juice, and mustard, and brush it on the chicken (both sides).
Then roll the chicken breast on the prepared breadcrums.
Spray a baking tray with the oil spray and place the coated chicken breast in it. Top with whatever's left of the breadcrums mix.
Place the tray in the oven and bake for about 15 minutes at 190 C (375 F). Take the tray out and turn the chicken breast over and bake again for another 15 minutes.
Serve immediately with a cup of steamed rice, and a spoon of sweet chilli sauce per serving. Add a nice low fat salad, and you'll have a great low fat chicken dinner.
