Chicken Florentine recipe with fresh spinach

This chicken Florentine recipe is simply delicious! It consists of tender chicken breasts served on a bed of freshly cooked spinach: Perfect for a healthy low fat dinner!

I used to dislike spinach when I was a kid, but the reason was that my mother always used those packages of frozen, mushed spinach. Only when I discovered, that you can use the fresh, dark green, leafy vegetable, I got hooked.

Now spinach is a staple food in my kitchen (and it should be in yours too!). It's highly nutritional and has many healthy benefits. Even most kids like it. Give it a try and see for yourself.

If for any reason your kids don't like the spinach, you can always replace it with their favorite veggie. Broccoli and cauliflower go very well with the chicken.

The Chicken Florentine Recipe is simply heavenly. Maybe that's because it was supposedly invented in Italy and the Italian kitchen is to do for?

4 skinless chicken breasts

2 Tbsp plain flour

1/2 tsp salt

1/4 tsp ground pepper

1 tsp grapeseed oil

1 bunch (9 to 10 oz) fresh spinach

3 Tbsp shredded basil (fresh if possible)

1 tsp crushed garlic

1/4 cup grated Parmesan cheese

This is what you do:

Mix flour, salt and pepper in a medium bowl. Dredge the chicken breasts in the flour mixture, coating them evenly on both sides.

Heat the grapeseed oil in a non-stick frying pan, and add the chicken frying it gently over medium heat. Turn the chicken over once the first side is cooked through. Once both sides are done, move away from the heat and cover to keep warm.

Chop the spinach into thumb sized pieces. Add together with basil and garlic to the frying pan and sauté for about 2 minutes.

Place 4 equal portions of the spinach mix on 4 separate plates to make the "veggie bed"  and place the fried chicken breasts on top.

Sprinkle with Parmesan cheese, and serve immediately.

Preparation Time: Less than 15 minutes.

Extra Tip:

Make double the amount of chicken and store in the fridge. You can put them the next day into your lunch box.  Just add fresh spinach (not sautéed, but as salad) and you have your perfectly healthy and yummy lunch with you.
