This Bavarian recipe is our favorite low fat potato salad. Especially in summer time, it is the perfect side dish for any grill party.
This potato salad is easy to prepare and you usually have all the ingredients in the kitchen and don't need to do some extensive shopping. But the best part (apart from being low fat , off course) is, that almost everyone likes it and leftovers taste just as well the next day or even two days later, when stored in the fridge.
It's ideal when you don't know if 10 or 15 people will be coming to your next party :-)
1/3 cup of white vinegar
1/3 cup of hot water
4 tablespoons of virgin olive oil
2 pounds of potatoes, suitable for salad
1 onion, finely chopped (1 cup)
1/2 teaspoon of salt
ground black pepper
Wash and peel the potatoes, boil them for about 25 minutes. Drain, cool and slice them.
Combine vinegar, olive oil, water and chopped onion.
Add salt, pepper and chives to your liking and pour over potatoes.
