Tomato and Mozzarella Salad

Tomato Mozzarella Salad. This is a yummy low fat salad with light mozzarella cheese.

Don't you just love tomato and mozzarella? I could eat it each and every day, but....mozzarella is not actually know as "low fat". With this recipe you have found the solution :-)

This is one of my favorite low fat salad recipes because I love tomatoes and I love mozzarella cheese even more.

You can make the recipe with whole fresh Basil leaves, which will give it a truly amazing flavor. Unfortunately it's very difficult to get fresh basil where I live (except in summer), therefore I had to use dried one.

By the way, if your situation is similar, you can make your own freeze-dried Basil leaves and keep them for winter time. I think they taste a lot better than the chopped ones you can buy.

Anyhow, I'm sure you'll love this yummy and healthy tomato and mozzarella salad.

2 cups of red plum tomatoes

2 cups of yellow plum tomatoes

1 cup of low fat mozzarella cheese

1 cup of fresh (or dried) basil leaves

1 cup of red wine vinaigrette

Ground black pepper

This is what you do:

  1. Cut tomatoes in halves and shred mozzarella cheese into pieces.
  2. Mix the tomatoes and shredded cheese in a big salad bowl.
  3. Add the basil leaves and vinaigraitte dressing, and add the freshly ground black pepper, mixing the whole salad well.
  4. Cover the bowl with Gladwrap, and refrigerate for about 1/2 hour.

You could also add red onion to your tomato and mozzarella salad if you like that special "kick" in your palate.

Tomato-Basil Salad with Olives

Personally, I hate olives, but my husband loves them. What to do? Here's our solution: I prepare the salad without olives and only add them to his plate just before serving. 

Now, both of us are happy :-)


4 medium tomatoes, cut into wedges

1/2 cup sliced pitted black olives (optional)

2 tablespoons sliced green onions

Nutrition per serving:

32 calories

8 grams carbohydrates

1 gram protein

147 mg sodium

1 gram fat

0 mg cholesterol

This is what you do:

1. To prepare marinade, in a large bowl, combine vinegar, broth, basil, celery salt, and pepper. Mix well.

2. Add tomatoes to marinade: toss to coat. Cover bowl with plastic wrap. Let stand, at room temperature, for 30 minutes.

3. Divide tomato salad evenly among individual plates. Sprinkle olives and green onions evenly on top. Serve immediately.

You can add a variation by adding 1/2 cheese flavored croutons to salad just before serving.
