Shrimp Toast

This is a very quick and easy recipe for shrimp, and Very low in calories.


4 ounces peeled and deveined shrimp
2 green onions (white and light green parts), diced
1/2 sliced water chestnuts
1 tsp. dry sherry
1 tsp. soy sauce
1 egg
1/16 tsp. pepper
9 slices light white bread


Preheat the broiler.

In a food processor or a blender, combine the shrimp, green onions, water chestnuts, sherry, soy sauce and pepper.

Process to a smooth paste.

Line a baking sheet with aluminum foil, and place the bread on it.

Toast the bread on one side and remove from the oven.

Turn the bread, and spread a teaspoon of the shrimp paste on each slice, making sure to cover it completely, and quarter on the diagonal to make 4 triangles.

Return the baking sheet to the broiler and broil for 2 minutes. Turn the baking sheet, and broil for an additional 1 minute, until the tops are toasted. Do not leave the bread will very quickly get too dark!

Makes 36 triangles of Shrimp Toast.
