Stuffed Mushrooms

Our favorite stuffed mushroom recipes are fast and easy to make, but still make a lasting impression on family and friends.

They're ideal for a barbecue, but can also be made in the oven. When we have friends come over, these low carb stuffed mushrooms are always the highlight of the cookout party and we never can make enough of them :-)

As you know I'm all for quick and easy recipes. This one includes only 2 main ingredients plus 3 spices and can be prepared in less than 10 minutes. Grilling though takes at least 20 minutes, but then you don't have to be there watching them...

Below you find my favorite recipe that includes feta cheese or cream cheese, but if you're Vegan you can replace the feta with tofu. Both versions taste heavenly!

Once you know how to do them, the variations you can cook are endless.

Don't be afraid of the fat contained in the cheese. As long as you don't overdo it, this recipe is a very healthy addition to your barbecue.

Cheese Stuffed Mushrooms


  • 10-15 big  button mushrooms
  • 5 oz (150g) feta cheese, cream cheese or tofu
  • black pepper
  • ground paprika
  • fresh basil leaves

We usually make them on a barbecue grill either with charcoal or  gas. If you decide to make the vegetarian stuffed mushrooms in the oven, preheat it to 375°F / 190°C.

Chop the stems

Cut the feta cheese into inch-sized cubes. Depending on the "whole" in your mushrooms you might have to make the cubes bigger or smaller.

Sprinkle pepper and ground paprika on top. Top with basil leaves.

Wrap individually in aluminum foil

Put for 20-25 minutes into the oven or into the grill basket. Do not put directly on top of the charcoal like you would do with oven potatoes.
