Vanilla Chicken

Vanilla chicken is a very famous recipe from the Reunion Island. This island is famous for it's bourbon vanilla, that was one of the main agricultural products produced here (besides sugar cane) in the 17th century.

Due the abundance of vanilla, the spice was used in many traditional meals. It might at first seem strange, because we tend to connect this spice with sweet dishes. But you'll be fascinated by this healthy dinner recipe. It tastes heavenly!

We usually serve it with rice, but vegetables (especially green beans or mushrooms) work very well, too.

Chicken is a low fat meat as are all the other ingredients in this delicious recipe. Additionally, the vanilla beans provide a very special and original taste. Make sure to buy free-range chicken if at all possible. The meat is much healthier and it also tastes better.

By the way, some studies have shown, that vanilla extract helps with weight loss. One more reason you should try this recipe :-)

Ingredients for 4 Persons:

  • 1 chicken
  • 4 onions
  • 2 vanilla beans
  • 6 garlic cloves (use less if you're concerned about smelling)
  • thyme
  • 1/2 tsp saffron
  • pepper, salt


  1. Remove the bones from the chicken and cut into small pieces.
  2. Braise the pieces until tender.
  3. Slice onions thinly.
  4. Grind garlic with salt and pepper.
  5. Add onions and ground garlic to the chicken and cook for a few minutes.
  6. Slit the vanilla beans lengthwise and scrape out the seed paste inside.
  7. Add the empty vanilla bean and the vanilla seeds to the chicken.
  8. Add 2 glasses of water and continue to cook until sauce has reduced to a thickly consistency.

This makes a wonderful dinner for the whole family, and is ready within 20 minutes.

Extra Time-Saving Tip:

Double the amount of the ingredients and use it as a take-away lunch. The Vanilla chicken can be perfectly eaten cold out of your lunch box. Just add a few raw vegetables as side dish and your colleagues will be full of envy.
